Hiiii!  I’m sorry it’s been so long!  I can’t believe I haven’t posted in over a week, but I’ve been working on something super fun — a video for this recipe. It seems y’all have been all about pumpkin bars lately, and although I love a good pumpkin bar this time of year, I also love in-season apples, straight from the orchard.

Besides the video preoccupying my time, I got my “first major cold of the year”, so life consisted of heading straight to bed, in my pajamas, with a cup of tea and Gilmore Girls re-runs for several days after work.  I’m almost on the up-and-up, so let’s get back to this comforting, delicious recipe…

Before the germs got the best of me,  I hit up a nearby apple orchard as part of a mega-girls day.  In fact, it was an apple orchard and a winery.  Like, no kidding, what says girls-day-on-an-October-day more than that?!Cinnamon Sugar Apple Fritters // Fork in the Kitchen

Of course as I perused the grape vines and apple trees, I stocked up on loads of apples.  I’m sure it goes without saying that I’ve been making my favorite recipes (including this family favorite apple crisp) and some new favorites, including these apple fritters:

They’re kind of like a doughnut crossed with a fritter crossed with a pastry.  Aaannnndd rolled in cinnamon sugar, which makes everything 1000X better.  And super fall-like.

First you dice up your fresh apple orchard picked apples (grocery store apples will work too, they just might not be as fun to acquire…) and mix them in with a little lemon juice, lots of cinnamon, and sugar.

Next mix together the batter and then fold in those apples.  Heat up your oil, and place a dollop of dough in the heat to fry to perfection.  The exterior becomes crisp while the inside becomes light, fluffy, baked apple goodness.

Those warm babies dry for a minute or two and then straight into the cinnamon sugar mixture they go – TO BE COVERED ALL OVER!  Because really, little apple fritter doughnut balls should ALWAYS be covered in cinnamon sugar.  Maybe a little glaze, too, if you really want to risk your blood sugar levels (no judgement here, promise).

Cinnamon Sugar Apple Fritters make the perfect breakfast – they’re quick, easy, and go perfectly with coffee!  Just be sure to eat them up immediately, they don’t reheat back to their first-out-of-the-fryer freshness.

Cinnamon Sugar Apple Fritters – a fall brunch recipe that’s sure to please; sweet and tart apple bits in a light, cinnamon batter, fried to a crisp exterior and coated in cinnamon sugar.

Ingredients

  • 2 1/4 cups apples, 1/2 inch diced (approx. 4-5 apples)
  • 1 Tablespoon lemon juice, approx. 1/2 lemon
  • 1/2 teaspoon cinnamon
  • 1 Tablespoon sugar

  • In a small bowl, combine apples, lemon juice, 1/2 teaspoon cinnamon, 1 Tablespoon sugar. Set aside.
  • In another mixing bowl, combine flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together egg, milk, vanilla, and melted butter. Add wet ingredients into dry and stir gently until combined. Fold in the apples.
  • Heat vegetable oil in a dutch oven over medium-high heat until the oil reaches 375°F. Combine 3/4 cup sugar and 1 1/2 teaspoons cinnamon in a small bowl for finishing. Set aside.
  • Using a 1-inch ice cream scoop, drop 4-5 batter balls into the oil. Cook on each side for approximately 2 minutes (4 altogether); do not crowd the pan. Remove from oil and dry on a cooling rack lined with paper towel.
  • After they've cooled slightly (1-2 minutes) stir around in the bowl to coat with cinnamon sugar. Remove and set aside. Continue until all batter is cooked. Serve immediately.
