Peaches, peaches, peaches, oh my all the fresh, juicy, ripe peaches!!!  I know I’m like a broken record you guys, but all this fresh summer produce just keeps me on cloud nine – I LOVE it!

Not to mention the peaches that are ripening up beautifully in the sun, but the BASIL!  Pre-move, my basil plant had grown ten-fold.  It was more like a small tree, which meant basil was going into everything (stay tuned for more on that).

So when I saw I had some gruyere left over in the fridge, I figured why not make a salad with the soft, juicy peaches I had ripening on the counter, with my ginormous basil leaves and cheese always makes things better, right?  Which is how I bring to you this Peach Basil Salad.

Oh, and I cannot forget the infused olive oil and balsamic vinegar that were an inspiration for this as well.  Remember the awesome olive oil shop in Savannah?  It was about time I got around to using the Peach Balsamic and the Chipotle Olive Oil.  If you don’t have these uniquely infused oil/vinegar, then go ahead and whisk in a little bit of chili powder to the olive oil and use a white balsamic.  That should do the trick.

Back to the Peach Basil Salad – let’s not forget that it’s super easy and quick to throw together, and the perfect carry-along to your next BBQ or patio/wine sesh.  You could even assemble upon arrival because it’s THAT EASY!

Get the Recipe Peach Basil Salad

Peach Basil Salad is bursting with fresh summer flavors - ripe, juicy peaches paired with fruity and earthy gruyere cheese and fragrant basil leaves, tossed in a chipotle and peach dressing.

Ingredients

  • 5 ripe peaches, sliced
  • 1/4 cup basil, chiffonade
  • 1 1/2 Tablespoons peach balsamic
  • 1 1/2 Tablespoons chipotle infused olive oil*
  • Dash of black pepper and salt
  • 2 oz. gruyere, thinly sliced into 1/2 inch strips

Instructions
 

  • Whisk together peach balsamic, chipotle olive oil, salt, pepper, and half of the basil. Toss in a bowl with peach slices and gruyere. Top with remaining basil. Serve immediately.

Notes

You can substitute white balsamic for peach balsamic; if you don't have chipotle olive oil, whisk in approximately 1/4 teaspoon chili powder with the olive oil.
This salad is best served the same day.
