Melon Skewers with Mint Dressing – the 5 minute appetizer that’s perfect for summer!
Hiiiiii my favorite food friends. It’s been too long, hasn’t it? I hope you’ll accept my apology in the form of a super-duper easy summer appetizer. Please?
Ok, great! [two thumbs up]
I want to just take a moment and let’s all just ruminate in the fact that June is almost over. What. The. Heck. It’s like summer just slowly makes its way into your life and then BAM it bursts on by. But let’s not focus on that, shall we? Let’s enjoy the sunshine.
And these Melon Skewers with Mint Dressing. Let’s enjoy them in the sunshine, in our bikinis, with umbrellas in our drinks. Cause I sure can’t think of any better way to be spending these long summer nights, can you?
Last weekend one of my greatest friends came to visit. We met SIX years ago on a study abroad trip to Ghana. This time around she went through hell and back to even make it to North Carolina (insert cancelled flights, uncooperative airlines, and further delayed flights). Nonetheless, she made it. And we spent about ever second of her time soaking up the sun, drinking some drinks, and of course eating.
Ok, but back to these Melon Skewers with Mint Dressing. I had to share that little tidbit because I needed to set the stage for you. The stage that is one of the most perfect stages for making this fabulous little appetizer.
You technically don’t even need a skewer, you could just throw it in a bowl and call it a salad.

So here it goes: alternate cantaloupe, Monterey Jack cheese, and watermelon. Drizzle with a slightly tangy dressing composed of white balsamic (kind of my new summer favorite as featured here, too), a little olive oil, and MINT. ALL THE MINT. Of course you should sprinkle more on top.
Quick tip: you could also just mix it all together in a bowl before putting them on a skewer. Up to you if you want to mix or drizzle. But more mint, always.
Need I say this isn’t only wonderful for a quick, easy appetizer when you’re laughing and catching up with old friends, but it’s perfect for summer get-togethers like on the Fourth of July (hint, hint, hint… ;)).

Get the Recipe Melon Skewers with Mint Dressing
Ingredients
- 7 oz. Monterey Jack cheese, cut into 1/2 inch cubes
- 60 1/2 to 1 inch cubes of watermelon, approximately 1/2 of a large watermelon
- 40 1/2 to 1 inch cubes of cantaloupe, approximately 1 whole melon
- 1/3 cup mint leaves, tightly packed and chopped
- 4 Tablespoons white balsamic vinegar
- 3 teaspoon olive oil
- Pinch of salt
- 20 skewers
Instructions
- Layer the following on a skewer: watermelon, cheese, cantaloupe, cheese, watermelon, cheese, cantaloupe, cheese, watermelon (or however you desire!).
- Whisk together balsamic vinegar, olive oil and mint. Drizzle on skewers.*
