Just in time for another summer weekend: Pineapple Jalapeño Smash.

A while back on the Instagram, I put up a poll, asking you guys if you preferred pineapple or mango; tequila or vodka. Man oh man did you guys have opinions! Mostly the opinion of “don’t make me choose!” So here we are, the Pineapple Jalapeño Smash for starters. I’m still working on our mango cocktail, but more on that later.

I’ve been seriously loving smash cocktails this summer (hellooo Strawberry Black Pepper Smash). Especially because it’s so easy to just mix up one – so for my single girl nights on the patio, I don’t have to feel overwhelmed with a pitcher of cocktails (haha… overwhelmed). Or if I have some friends over, we can each easily whip up our own smashes – some like it a little spicer, some don’t – to each her own and lovin’ it!

And who doesn’t love a super easy, delicious cocktail, that feels “healthy” because there’s a ton of fruit in it?! No one I know!

I always forget how much I love pineapple. I know, that sounds bizarre, but really. Ask me my favorite fruit, and obviously I say strawberries (I mean, you have been around here, right? Obsessed.). But then I get to thinking and I’m like omg I love watermelon too. And reallllllyyy good cantaloupe. And then I remember the amazing joy that is a fresh, sweet pineapple.

Now imagine the joy of fresh, sweet pineapple paired with spicy jalapeño (YES SWEET AND SPICY COMBO!). It’s like pineapple salsa, cocktail form, like everything you’ve ever wanted to cool off with on a hot summer night.

Let’s get to it: the muddle. The heart of the smash. Instead of muddle we probably should just call it the SMASH then, shouldn’t we? Regardless of what we call it, we start with the pineapple, jalapeño, and lime juice and muddle – or smash – it all together. In goes a little pineapple juice, vodka, and ice cubes… shake and pour! Voila! Seriously, that easy, and before you know it you’re pool-side ready. Or patio. Or backyard picnic. Or …any type of activity you can enjoy this lovely smash at.

Get the Recipe Pineapple Jalapeno Smash

An easy summer cocktail made with fresh pineapple and jalapeño slices - the perfect combination of sweet and spicy!

Ingredients

  • 6 1- inch fresh pineapple chunks
  • 1-2 slices fresh jalapeno
  • 1/2 lime, juiced
  • 1.5-2 ounces vodka
  • 3 oz. pineapple juice

Instructions
 

  • In a mason jar or shaker, add pineapple, jalapeño, and lime juice. Muddle together until smashed and combined. Add vodka, pineapple juice, and a few ice cubes. Cover and shake.
  • In an old-fashioned glass, add ice, and pour cocktail in glass and garnish with pineapple or jalapeño slices as desired.

Notes

You can skip the shaking step if you want - just add the ice to your muddled ingredients, pour in liquids, and stir.
