It’s like I was just dangling it in front of you with the grilled shrimp, then the dressing.
Each component of this dynamite chipotle grilled shrimp salad needed its limelight, so it got it. Now they come together to rock your world.
We’re talking taking your weeknight dinner game to the next level.
Taking vegetables and making them exciting. I refuse to let boring salads exist, and this is no exception.
If you, too, require lettuce filled bowls to be loaded with texture, flavor, and everything summer has to offer, then this is your salad.
It’s going to quickly become your weekday dinner go-to with its easy-to-make creamy dressing, the quick-grilling shrimp, and did I mention that it has loaded flavor?
It’s ultimately filling after a summer day on the lake, hiking, kayaking…or in your backyard sipping cocktails on the patio. No judgment how you spend your sunshine-filled days.
What’s this Creamy Chipotle Shrimp Salad All About?
We’ve talked about the dressing previously, and I know you’ve been slathering it on just about everything – salads, dip for fries, tacos – you know those possibilities are endless.
It’s the ultimate creamy, smoky, flavor-packed chipotle dressing and it’s here to stay with this salad.
Then, of course, we have the grilled shrimp.
The succulent, juicy, smoky, and spicy, grilled shrimp that bring added protein to the salad along with hello, being delicious. You know that the magic happens when you grill shrimp!
Then we have the other texture additions. They’re not just here for the texture though. No, they’re here for the whole package: for flavor, for nutrition, and ultimately for a non-boring salad.
Into the salad:
- black beans
- fresh sweet corn
- juicy tomatoes
- crispy onions (or red onion for gluten-free!)
- squeeze of lime
- salt and pepper, for a nice finish
I should talk about those crispy onions for a second – or by their other names of shoestring onions, or fried onions. Whatever you want to call them, I LOVE them in this Spicy Chipotle Shrimp Salad!
It’s not often I buy a package of them, so obviously when I do it has to be for a very good purpose. They add an additional crunch to the salad, and give it a more indulgent feel (you know, since they are fried and all). If you’re not a lover of them – or don’t have them on hand – I’d recommend subbing in some diced red onion for an additional onion kick.
Now that we’ve got the salad components covered, toss everything in a large bowl, toss to coat with the creamy chipotle lime dressing, add the shrimp on top, and away you go!

Get the Recipe Spicy Chipotle Shrimp Salad
Ingredients
- Chipotle Grilled Shrimp
- Chipotle Cilantro Dressing
- 5-6 cups romaine lettuce, chopped
- 1 15- oz. can black beans, drained and rinsed
- 2 ears of corn kernels
- 1 cup cherry tomatoes, halved or quartered
- 1/4 cup crispy onions
Instructions
- Prepare the shrimp and let marinate according to the shrimp recipe directions. While it marinades, prepare the dressing according to the dressing recipe directions. Set the dressing aside or in the fridge until ready to toss salad.
- In a large bowl, combine the chopped romaine, black beans, corn kernels, tomatoes, and crispy onions together. When ready to serve, toss with dressing (I start with about half, or several tablespoons worth, and add as desired). Add the grilled shrimp to the top of each salad and enjoy!
