Spicy Chipotle Shrimp Salad

Description

A flavorful Southwest-inspired salad made with grilled chipotle shrimp and a creamy cilantro dressing. It’s a filling, flavorful summertime dinner!

  1. Prepare the shrimp and let marinate according to the shrimp recipe directions. While it marinades,  prepare the dressing according to the dressing recipe directions. Set the dressing aside or in the fridge until ready to toss salad.
  2.  In a large bowl, combine the chopped romaine, black beans, corn kernels, tomatoes, and crispy onions together. When ready to serve, toss with dressing (I start with about half, or several tablespoons worth, and add as desired). Add the grilled shrimp to the top of each salad and enjoy!

Notes

Replace the crispy onions with red onions to make gluten-free.
