Vegetarian BBQ Side Dish Recipes: Grilled Sweet Corn Salsa
Ingredients
- 1 ½ cups corn-on-the-cob kernels, approx. 2 ears
- 1 ½ Tablespoons red onion, finely diced
- 2 garlic cloves, finely chopped
- 1 ½ Tablespoons jalapeno, finely chopped
- ¾ cup tomato, diced, approx. 1 medium tomato
- ½ teaspoon salt, to taste
- 3 Tablespoons cilantro, chopped
- ½ lime, juiced, to taste
Instructions
- Preheat grill to medium-high heat. Husk the corn on the cob, then place on clean grill grates and cook for a few minutes on each side, rotating until charred and soft all around.
- Let the corn cool slightly while you prepare the remaining ingredients. Add the rest of the ingredients to a medium bowl. Once the corn is cool, cut off the kernels and toss in the bowl until combined.
- Taste test and add additional salt or lime juice as needed. Serve with chips or as a side dish (or even on top of tacos, etc.).
