GARLICKY SMASHED FINGERLING POTATOES

These smashed fingerling potatoes are one of the best side dish recipes. With their creamy, buttery, interior and crispy, garlic-loaded exterior, it’s a perfect combo. Plus, they’re ready in under 30 minutes and are made with just 4 simple ingredients.

INGREDIENTS

- Fingerling potatoes - Garlic - Salt - Thyme

Wash your potatoes.

Place your potatoes in a pot and cover them with water. Add a generous pinch of salt and bring them to a boil.

Then leave the potatoes to simmer until your potatoes are fork tender.

Add your potatoes to a well greased baking sheet (to encourage crispiness!) then smash them!

Take time to brush them with garlic butter and some sea salt. 

A VIP Tip

I recommend flattening them out to about 1/2 inch.
