This super easy Mexican-inspired Elote Corn Dip is made with frozen corn so it comes together quickly – under 5 minutes – and is packed with flavor! It’s perfect to make ahead and serve at BBQs and potlucks or on Taco Tuesday!

INGREDIENTS

- Frozen fire-roasted corn - Mayonnaise - Scallion - Garlic - Chili Powder - Lime - Cilantro - Cotija Cheese (or parmesan)

Whisk together all ingredients except for the corn.

Stir in thawed corn until coated, taste test and adjust as needed.

Garnish with additional cilantro and cheese if desired, then serve with chips and enjoy!
