BANANA CARROT MUFFINS

Banana Carrot Muffins are cross between banana bread and carrot cake in the best way possible. They’re light, fluffy, and moist!

Would give ten stars if I could!! These are the best muffins I have ever made!! I added a tad more cinnamon (just cuz I love the stuff lol) You are right it’s the perfect combo of banana bread and carrot cake!! This recipe is at the top of my favorites list! -Joanie

THE INGREDIENTS

- butter - flour - baking powder & soda - salt - cinnamon - granulated and brown         sugars - eggs - vanilla extract - shredded carrots - banana - pecans, optional

Combine the dry ingredients in a large mixing bowl.

Combine wet ingredients, then mix them together with the dry.

The batter will be thick at this point - don't worry!

Add mashed banana and freshly grated carrots.

Mix together until just combined.

Add batter to 16 muffin tins.

Top with chopped pecans, if desired.

Bake until set and slightly golden brown around the edges.

Enjoy! You can freeze the muffins, too to have available whenever!
