15-Minute Bok Choy Stir Fry

Bok Choy Stir Fry is ready for dinner in just 15 minutes! Made with homemade stir fry sauce, lots of garlic and ginger, and umami-packed mushrooms, it’s a nutrition-loaded vegetarian meal.

INGREDIENTS

- Stir Fry Sauce (recipe             included!) - Mushrooms - Baby Bok Choy - Garlic - Ginger

Whisk together the stir fry sauce and set aside.

Heat a wok or large skillet with the sliced mushrooms and allow the water to simmer out of them.

Once brown, add the minced garlic and ginger with a little bit of neutral oil.

Add sliced baby bok choy. Either keep the leafy tops large, or reserve them so they don't overcook.

Pour in the stir fry sauce and toss to coat completely.

Simmer until sauce is thick and veggies are tender yet crisp.
