That sauce! Oh my oh my oh my! The sauce is the show stopper on this one. It blends so seamlessly with the creamy cheese and tomatoes. We had this for a Valentine’s Day brunch and we will probably be making this sauce until we die. 10 out of 10!

Combine the romesco sauce ingredients in a food processor, if making homemade.

Blend until smooth and set aside as you prepare the rest of the items.

Cut cocktail tomatoes in half, toss in olive oil, then roast, cut side up, until tender and roasted.

Dice Yukon Gold potatoes toss in oil and roast until crispy. Then, stir with fresh rosemary and garlic.

Spread romesco sauce on a board, then top with burrata cheese and sprinkle with salt.

Soft scramble eggs and make the toast immediately before serving. Place everything on the board.
