BROCCOLINI AND WHITE BEAN CROSTINI

This easy appetizer is bright, full of texture, and a healthy finger-food option for parties or holiday get-togethers!

INGREDIENTS:
broccolini, cannellini beans, baguette, parmesan, lemon, parsley, olive oil, and garlic.
Roast 1-2 inch pieces of broccolini in the oven.
Drizzle olive oil and salt on baguette slices, and toast in the oven until crisp.
Combine beans, garlic, lemon zest and juice, parsley, red pepper flakes, and salt.
Mash using a fork or pastry blender to desired consistency.
Let the crostini cool enough to handle before assembly.
Spread the white bean mixture on top of the crostini.
Top with the roasted broccolini pieces.
Add parmesan cheese shavings and freshly ground black pepper.
