Brookie Cookie Dough Ice Cream Sandwiches

Cookie dough ice cream sandwiched between fudgy brownies and soft cookies for a deliciously indulgent summer treat!

Mix up the cookie dough batter and brownie batter separately.

Spread the brownie batter in a 9x13 pan.

Dollop the cookie dough across the top of the brownie batter.

Press the cookie dough balls down evenly, then bake.

Let them cool completely, then cut in half and flip one half top-side-down in the pan.

Top that half with softened cookie dough ice cream, and press it gently down, filling any gaps as needed.

Place the other half of the brookies on top of the ice cream layer and freeze for 4 hours.

Use a biscuit cutter to cut out the sandwiches (or simply cut out squares). 

Save any scraps of the sandwich after cutting for snacking!

Enjoy immediately or place back in the freezer until you're ready to enjoy.
