BUTTERNUT SQUASH SWEET POTATO SOUP

INGREDIENTS

- butternut squash - sweet potato - shallot or onion - garlic  - salt & white pepper - cinnamon & nutmeg - fresh thyme - vegetable stock

HELPFUL TOOLS

Immersion blender or a blender.

Dutch oven or large stock pot.

Saute olive oil, onions, and garlic until tender. Add squash, sweet potato, fresh thyme, and herbs.

Once the vegetables are tender, add vegetable stock.

Use an immersion blender to puree the soup until smooth.

Top with croutons and/or yogurt as desired and enjoy!

Can I freeze this soup?

Absolutely! Freeze it in an airtight container once it's completely cooled; leaving extra room for expansion.
