CRISPY POTATOES WITH GARLIC AIOLI
Crispy, salty potatoes make the perfect side dish, appetizer, or snack, especially when paired with creamy garlic aioli. This irresistible combination is so easy to make and always a crowd-pleaser!
- Yukon Gold Potatoes - Olive Oil - Salt and Pepper - Garlic - Mayonnaise - Lemon Juice - Rosemary (optional)
Cut the top off of a bulb of garlic and place it in foil. Drizzle with olive oil and salt, and wrap in the foil. Roast in the oven.
Cut the potatoes into planks.
Cut the planks into strips.
Then, cut the strips into a small dice (smaller = crispier sides).
Toss the potatoes with olive oil, salt, and pepper. Bake, tossing halfway between, until crispy.
Once the garlic is roasted, squeeze the bulbs into the mayonnaise and lemon juice to make the quick aioli.
