CURRIED SHRIMP FRIED RICE

Let take-out be a thing of the past now that you can make delicious Curried Shrimp Fried Rice right at home and in one pan! The spicy and warm flavor of curry is infused throughout, and the extra veggies make it a complete meal!

INGREDIENTS

- Shrimp - Curry Powder - Cumin - Soy Sauce - Sesame Oil - Mushrooms - Carrots - Yellow Onion - Garlic - Ginger - Snap Peas - Rice

The secret to THE BEST fried rice...

Use day-old or at least COLD rice for the best fried rice!

Marinade raw shrimp in curry powder, cumin, soy sauce, and olive oil.

Heat a wok or large skillet and add the shrimp, cooking them only halfway through, then remove.

Saute diced carrot and onion in the skillet.

Add in diced mushrooms and cook, allowing their liquid to release.

Add frozen peas (or snap peas), then remove the veggies from the pan.

Add oil to the pan, adn spread rice in an even layer. Let it cook without stirring.

Pour the sauce into the rice, stirring to coat, then spread in an even layer and let it cook again - without stirring.

Add the veggies and shrimp back to the rice and cook until shrimp is pink and opaque.

Enjoy with green onion slices, cilantro, and/or chopped cashews as desired.
