Make this Fresh Strawberry Pie without gelatin or Jell-O while the strawberries are ripe and juicy! Classic graham cracker crust is filled with a sweet, fresh strawberry filling made with agar-agar. It's a no-bake recipe that's perfect for summertime!

Make a graham cracker crust, then chill it. You can also use a store-bought crust!

Gather the strawberries, agar-agar, sugar, and water.

Combine 5 1/2 cups quartered strawberries with sugar.

Stir to combine, and set aside.

Occasionally stir the strawberries until you have at least 3/4 cup liquid (about 20 minutes).

Drain the syrup from the strawberries using a fine mesh strainer.

Combine the syrup, water, and agar flakes in a saucepan and bring to a boil.

Puree the remaining strawberries in a food processor or blender.

Combine agar mixture (once cooled slightly), pureed strawberries, and the macerated strawberries.

Stir until combined.

Spread the filling in the graham cracker crust and chill for at least 4 hours.

Slice and serve with a big dollop of whipped cream!

Make it before strawberry season is gone!
