What is halloumi?

Halloumi is a Cypriot cheese, originating from the island of Cyprus. It’s a semi-hard cheese made from a mixture of goat and sheep’s milk. It can also be made with cow’s milk. It's salty, squeaky, and when cooked creamy yet holds its shape.

1

Cut the halloumi into about 1-inch cubes, and dice the veggies smaller, but equal in size.

2

Whisk together the marinade, then pour onto the veggies and halloumi.

3

Let sit for at least 30 minutes, up to 24 hours.

4

Thread on a skewer. Salt the veggies (no salt in the marinade because halloumi is salty).

5

Grill over medium-high heat, turning every couple of minutes until golden brown and the veggies are tender.

6

Serve immediately with tzatziki or a tahini sauce and pita. Enjoy!
