WHAT YOU'LL NEED
– Yukon gold potatoes – unsalted butter or olive oil – yellow onion – garlic cloves – all-purpose flour – vegetable stock – whole milk – kosher salt – white pepper – black pepper – fresh thyme – Gruyere cheese – Parmesan cheese

Thinly slice Yukon Gold potatoes using a mandolin.
Prepare the sauce by melting butter. Then add onion and garlic.
Whisk in flour and cook for 1-2 minutes, stirring frequently.
Whisk in vegetable stock and milk until combined, then add in herbs and spices.
Layer half of the potatoes in a 9x9 pan, then top with half of the sauce and cheeses.
Layer the remaining potatoes on top, then top with the rest of the sauce and cheese.
Cover with foil for the first half of the bake time, then remove until golden brown.
Garnish with fresh thyme.
