Halloumi Sandwich with Romesco Sauce

When you need a flavorful, hearty vegetarian lunch (or light dinner), this Halloumi Sandwich with Romesco Sauce is the answer! It’s easy to make and has wonderfully vibrant flavors.

INGREDIENTS

- Halloumi - Romesco Sauce - Arugula - Ciabatta Rolls or Bread

What is halloumi?

Halloumi is a Cypriot cheese, originating from the island of Cyprus. It’s a semi-hard cheese made from a mixture of goat and sheep’s milk. It can also be made with cow’s milk. It's salty, squeaky, and when cooked creamy yet holds its shape.

If needed, make the romesco sauce (you can also use storebought).

Spread romesco sauce on each side of the sliced ciabatta roll.

Top with arugula. It's important to prep the sandwich first so it's ready once the halloumi is cooked.

Slice the halloumi block, then brush with oil and pan-fry for about 2 minutes a side until golden brown.

Place the cooked halloumi on the sandwich (it was on a grill pan here).

Put the top on the sandwich and enjoy immediately!
