Saute onion, celery, and carrot in a large Dutch oven. Add a pinch of salt.

Add garlic, herbs, and spices and cook for a minute.

Add diced potatoes and parsnip, and cook so they slightly caramelize.

Then, add sliced leek and diced turnips.

Add vegetable stock, stir to combine, and bring to a simmer.

Simmer uncovered for 15-20 minutes until the veggies are tender.

Add kale and let it wilt, then add a squeeze of lemon juice and remove the bay leaf.
