How to Make Caramel Popcorn from Scratch

When you need a sweet, salty, crunchy snack that everyone loves – homemade caramel popcorn is the answer! It’s easy to make with a rich caramel flavor that’s full of depth – plus a little saltiness for the perfect balance.

INGREDIENTS

- popcorn kernels - butter - brown sugar - maple syrup - corn syrup - vanilla extract - salt - baking soda

Do I need corn syrup?

I highly recommend using the little amount in the recipe (the rest is substituted with maple syrup).  It helps prevent the caramel from crystalizing - keep it smooth and grain-free!

Make homemade popcorn! Pour oil into a large heavy-bottomed stockpot or Dutch oven.

Add 3 popcorn kernels over high heat. Cover, and wait for them to pop.

Once the kernels have popped, it's a signal that the oil is hot enough and the popcorn will pop evenly.

Immediately add the popcorn kernels to the pan.

Immediately cover and remove from heat, swooshing back and forth for 20 seconds.

Return back to the heat, and allow the popcorn kernels to pop away!

Pour the popcorn into a large serving bowl. Set aside while you prepare the caramel.

Over medium heat, whisk together the sugar, syrups, butter, and salt until melted.

Simmer without stirring for 4-5 minutes.

Whisk in baking soda and vanilla (it will bubble), then quickly pour over the popcorn.

Toss to coat completely - work fast, it's sticky!

Spread in an even layer on a parchment-lined baking sheet. Bake at 250°F for 1 hour, stirring every 15-20 mins.

Let cool completely, then transfer to a storage container or bowl for serving. Enjoy!
