Lemon Lavender Scones

Lemon Lavender Scones are an elegant, bright addition to any spring brunch or breakfast table! Aromatic dried lavender is lightly infused throughout the scones, with a burst of lemon, and they’re topped with sweet icing. They're soft, moist, and irresistible!

INGREDIENTS

- Sugar - Lemon Zest & Juice - Milk - Vanilla Extract - Flour - Baking Powder - Baking Soda - Salt - Dried Culinary Lavender - COLD Butter

Zest the lemons, then rub the zest in granulated sugar to release the oils.

Combine the milk, lemon juice, and vanilla extract. Place back in the fridge until ready to use.

Stir together the flour, baking powder, baking soda, salt, lavender, and sugar mixture.

Cut the cold butter into the dry ingredients using a dough blender. Make sure it's COLD!

Gently stir the wet ingredients into the dry ingredients being careful to not overmix.

Transfer the dough onto a lightly floured workspace.

Gently knead the dough together, then press into an 8x5 inch rectangle.

Cut the dough into 6 squares by cutting in half lengthwise, and then thirds.

Cut each square in half diagonally to create 12 small triangles.

Transfer to a baking sheet and brush with milk. Bake for about 20 minutes.

Drizzle with icing if desired and enjoy! Excellent with tea, coffee, and friends.
