Lemon Lavender Scones are an elegant, bright addition to any spring brunch or breakfast table! Warm and fragrant lavender is lightly infused throughout the scones, with a burst of lemon, and they’re topped with sweet icing.
Simply Divine………the only problem is I made 12 for party, but only delivered 9 – they were too yummy to resist. Absolutely delicious, and so easy too!! Thanks and I’ll be sure to double up the next time 🙂
Zest the lemons, then rub the zest in granulated sugar to release the oils.
Combine the wet ingredients in a mixing bowl.
Add dry ingredients in a separate mixing bowl.
Add the lemon zest and sugar mixture to the dry ingredients.
Cut the cold butter into the dry ingredients.
Gently stir the wet ingredients into the dry ingredients being careful to not overmix.
Pour the dough onto the counter and gently knead into a rectangle.
Cut the dough into squares, then into triangles and transfer to a baking sheet.
Brush each scone with milk to help them turn golden brown and retain moisture. Then, bake!
Drizzle each scone with icing - it's optional but recommended. ;)
And enjoy! Excellent with coffee, tea, or more icing...
