Mushroom Gnocchi Soup with Wild Rice

Sautee

1

Sautee onion, celery, and carrots in a large stock pot. Add mushrooms , herbs, and spices.

Add wild rice

Add the wild rice blend, vegetable stock, and water to the pot. Bring to a boil and cook rice just shy of al dente.

Add the gnocchi

Add potato gnocchi to the soup and cook according to package directions.

Stir in half-and-half

Add half-and-half and stir to combine (omit to make vegan). 

Enjoy!

Garnish with parsley as desired, serve with bread (highly recommended), and enjoy!
