Use a large skillet with tall sides for best results. It needs to be able to hold all the stock and pasta!
A dutch oven will also work.
Saute onion, broccolini, and sun-dried tomatoes with salt and pepper.
Add orecchiette pasta and vegetable stock to the skillet. Boil until al dente, stirring frequently.
Once cooked, add parmesan cheese and butter, stirring until melted and combined.
Garnish with additional cheese and red pepper flakes as desired.
