ONE POT CREAMY TOMATO SPINACH GNOCCHI

You are going to love this easy dinner recipe. It uses refrigerated gnocchi for a quick, simple gnocchi dish and is tossed in a luxurious and creamy tomato spinach sauce for a comforting vegetarian meal that’s ready in just 25 minutes!

Made this for friends we had over for dinner. One of our friends is a Chef and he was very impressed! My husband is Italian and he is begging me to make it again! Thank-you for an easy, one pan recipe that tastes like I slaved all day 😉-Jill

INGREDIENTS

- Olive Oil - Leek - Onion - Garlic - Cherry Tomatoes - White Wine or Stock - Butter - Gnocchi - Parmesan Cheese  - Spinach - Half-and-Half

Saute chopped leek and yellow onion in olive oil.

Add garlic and cherry tomatoes.

Gently burst the tomatoes as they soften. Deglaze with wine.

Add butter and gnocchi. Cover, and simmer.

Stir in parmesan cheese and half-and-half.

Add baby spinach leaves, stirring until wilted.

Serve and enjoy with extra parmesan cheese as desired.
