PUMPKIN SUGAR COOKIES

You'll fall in love with these soft, light, fluffy pumpkin sugar cookies topped with brown sugar cream cheese frosting.

INGREDIENTS

PUMPKIN SUGAR COOKIES: -all-purpose flour – cream of tartar – baking soda, salt - pumpkin spice, cinnamon – granulated sugar - powdered sugar - butter – vegetable oil - egg - vanilla extract – pumpkin puree

PREPARATION

Preheat the oven to 350F.

Line a cookie or baking sheet with parchment if desired.

Stir together dry ingredients.

Cream together room temperature butter and sugars.

Add pumpkin puree (not pumpkin pie filling!). Then add egg and vanilla.

Add the dry ingredients and stir until just combined.

Dollop on a baking sheet, then use a sugar-coated glass to lightly flatten the cookies.

Bake cookies until the edges are set and slightly golden brown.

Spread brown sugar cream cheese frosting on cooled cookies.

Garnish with chopped pecans, if desired.

Can I halve the recipe?

I wouldn't recommend it because there is just one egg, and that can be tricky to measure out. You can freeze any extra cookies and frost them later.
