EASY RED CABBAGE COLESLAW  (NO VINEGAR)

Every good BBQ and potluck needs a delicious coleslaw. Make this red cabbage version with lime juice, cilantro, and homemade dressing in under 10 minutes; it’s light, creamy, and flavorful!

INGREDIENTS

- Red Cabbage - Carrots - Cilantro - Mayonnaise - Lime Juice - Garlic Powder - Ground Mustard - Celery Seed - Sugar, optional

Use a box grater or food processor to thinly slice the cabbage and shred the carrots.

Massage cabbage with salt to soften, then toss with the carrots and celery.

Stir together the mayo, lime juice, spices, and sugar (if using) for the coleslaw dressing.

Toss the veggies with the homemade dressing, taste test and adjust as needed.

Serve as a side or on a jackfruit BBQ "pulled pork" sandwich.
