ROASTED CHERRY AND GOAT CHEESE CROSTINI

Pit and halve cherries and bring the goat cheese to room temperature.
Toss cherries, thyme, and a bit of olive oil on a baking sheet to roast.
Roast the cherries for 25 minutes until tender and caramelized.
Meanwhile, also bake the crostini until golden and crisp.
Let crostini cool to the touch before assembly.
Spread softened goat cheese on each crostini.
Top with roasted cherries and garnish with thyme and basil.
