This creamy roasted garlic aioli recipe is bright, tangy, and so refreshing! It combines lemon juice, mayonnaise, a roasted garlic bulb, and a drizzle of olive oil. That’s it— it is as simple and satisfying as can be. Ready in just 25 minutes!

Cut the top off a bulb of garlic to prepare it for roasting.

Place the bulb on foil, then drizzle with olive oil and wrap the foil around it.

Roast in the oven for 25-30 minutes until tender.

Add mayonnaise to a bowl (that's our shortcut!).

Squeeze in the cooled garlic bulbs.

Use a fork to mash the garlic. Alternatively, you can chop them before adding.

Squeeze in fresh lemon juice and add salt to taste.

Stir to combine. Garnish with chives or herbs as desired, then dip away!
