ROASTED TOMATO CARROT GINGER SOUP
Cozy up with Tomato Carrot Ginger Soup. It’s healthy and absolutely comforting - and gluten and dairy free. Even better? It’s ready in under 25 minutes and is basically a hands-off recipe.
- Tomatoes - Carrots - Ginger - Garlic - Onion Powder - Turmeric - White Pepper - Dried Basil - S&P - Vegetable Stock

Toss halved tomatoes, carrot pieces, garlic cloves, and ginger with olive oil, salt, and pepper.
Roast in the oven for 18-20 minutes until the carrots and garlic are tender.
Transfer to a blender or large pot to immersion blend. Add additional spices and herbs.
Blend until smooth, being sure to taste test for salt levels.
Serve immediately. Garnish with fresh basil or parsley, croutons, or cheese as desired.
