An easy, 30-minute dinner for two loaded with veggies and noodles.
Par-boil Chinese noodles
Boil Chinese noodles for 1-2 minutes; drain and rinse. Set aside.
Add the veggies!
Add snow peas, red bell pepper, and shredded carrots. Sauté until tender.
Add noodles and sauce.
Add the noodles to the skillet and add the sauce. Stir until completely combined.
Divide between two bowls (or as many as desired), garnish with scallions, and enjoy!
