Vegetarian Croque Madame

+ traditional version

Croque Madame is a savory, indulgent sandwich, traditionally made with ham, but this recipe includes a vegetarian version that uses caramelized onions and garlic to add the savory je ne sais quoi flavor that takes it to the next level.

Gather the bread slices, gruyere and parmesan cheeses, dijon mustard, and onions or ham for the meat-eaters.

Caramelize the onions and garlic - low and slow - until golden brown.

In a small saucepan, make the bechamel sauce (which we'll do this with later).

Spread mustard on one side of the bread, then place it in a buttered pan. Layer on cheese, then onions (and ham if using).

Add the second slice of bread, then flip until golden brown and cheese is melted.

Transfer sandwiches to a baking sheet and preheat broiler.

Spread bechamel sauce on top of each sandwich.

Add additional gruyere and parmesan cheeses.

Broil until cheese is melted and golden brown, meanwhile frying an egg.

Top with a fried egg, and dig in!
