Vegetarian Bean and Cheese Enchiladas

These vegetarian enchiladas are easy to make and ultimately satisfying and filling thanks to the black bean and refried bean filling! Baked in the oven until cheesy and bubbly, it's a dinner the entire family will love!

INGREDIENTS

- Enchilada Sauce - Green Onion - Garlic - Diced Green Chiles - Refried Beans - Black Beans - Corn (frozen or fresh) - Monterey Jack cheese - Sharp Cheddar cheese - Corn Tortillas - Toppings, as desired

Make homemade enchilada sauce! It comes together quickly and is so flavorful!

Combine black beans, green onion, garlic, diced green chiles, and spices.

Spread enchilada sauce on a tortilla (or you can dunk it).

Add refried beans, then the black bean mixture, to the center of the tortilla.

And a good sprinkle of shredded cheese!

Roll the tortilla around the filling.

Add the rolled tortilla to a baking dish, with enchilada sauce on the bottom.

Spread the remaining enchilada sauce on top of the enchiladas.

Top with the remaining shredded cheese.

Bake for 25 minutes until cheese has melted and sauce is bubbly.
