INGREDIENTS

- Tortillas - Onion & Jalapeno - Red Bell Pepper - Garlic - Chipotle Peppers in Adobo Sauce - Chili Powder & Cumin - Oregano - Fire Roasted Tomatoes - Black Beans - Corn - Vegetable Stock - Lime Juice

TORTILLA STRIPS

Purchase tortilla strips for a super easy shortcut. OR Pan-fry or bake corn tortillas so they crisp up and are ready to top the soup.

Saute onion, jalapeno, and red bell pepper.

Stir in garlic, chipotle peppers and adobo sauce until coated.

Stir in diced tomatoes, black beans, corn, and vegetable stock. Simmer for 10-15 minutes.

Be sure to taste test for salt levels, and stir in the lime juice - a must!

Serve and garnish with lots of tortilla strips and other garnishes as desired.
