Store in an airtight container until ready to serve. Garnish with additional chives as needed.
VEGGIE SKEWERS:
Using a vegetable peeler, peel the cucumbers into ribbons. I recommend doing two sides until you begin hitting the seeds.
Using medium sized bamboo skewers, place one tomato, a rolled cucumber ribbon, one side of the yellow pepper slice, one tomato, the other side of the pepper, another cucumber roll, and a tomato. Continue until complete.
