Apricot, Almond, and Thyme Grilled Brie is elevating your grilling game this summer! This easy grilled appetizer recipe is creamy, loaded with texture on top (hello, almond slices!), and a drizzle of honey and fresh thyme make it extra scrumptious!
Preheat grill to medium-high heat, around 400-450°F.
Place the almond slices, thyme, butter, and a pinch of salt in a foil packet; fold it closed and place it on the top rack of the grill for 10-14 minutes.
Lightly brush each side of the brie wheel with oil. Place the brie on the grill over direct heat and cook for 3-4 minutes; flip carefully to avoid tearing the rind, and cook for an additional 3-4 minutes.
Remove from grill and top with apricot preserves and the almond packet. Drizzle with honey.
Serve with baguette or crackers and enjoy!
Notes
If you're worried about the cheese melting onto the grill in the chance that the rind opens, wrap it in foil before grilling.
If you don't have a grill, use a grill pan on the stove or bake the brie in the oven in a baking dish for 8-10 minutes.
