This Iced Honey Lavender Latte is sure to become your new go-to hot-weather coffee drink! It's slightly sweet, floral, and totally comforting. Made with oat milk, it's dairy-free, too!
Simple Syrup: In a small saucepan, combine honey, water, and lavender flowers. Heat over medium-high heat until simmering stirring occasionally until the honey is dissolved. Remove from heat and let sit for 20-60 minutes to allow the lavender to fully infuse. Strain the syrup into a jar using a fine mesh strainer. You can use it immediately if needed.
1/4 cup honey, 1/4 cup water, 1 teaspoon dried lavender flowers
For 1 Latte: Pour approximately 2 teaspoons of the lavender honey simple syrup in a 12 oz. glass or jar to drink from. You can adjust the sweetness level as needed. Add the espresso and stir to combine. Fill the glass with ice, then pour in the milk and stir to completely combine. Add more milk as desired. Serve immediately and enjoy!
The lavender honey simple syrup will make enough for many lattes (around 1/2 cup total or so). Store the extras in an airtight container in the fridge for up to 2 weeks.
