Pre-heat oven to 350°F. Cut jalapenos in half. Using a spoon, scoop out the "insides" - seeds and all. Lay out on a large baking sheet.
Using a hand mixer, beat together the cream cheese, peanut butter, ginger, garlic, and salt.
Fill jalapeno halves with cream cheese mixture; I use a piping bag for ease, but you could easily just scoop it in with a spoon.
Bake in the oven for 8-10 minutes.
Top with green onions slices and serve.
Notes
If you don't have a piping bag, use a ziplock with a corner snipped off. As mentioned in the recipe, you can also just scoop the filling in without any kind of bag!
