Apple Cider Cupcakes with Bourbon Cream Cheese Frosting

Bake these Apple Cider Cupcakes for a fun fall treat, with their moist, tender crumb and cream cheese frosting - you cannot go wrong! No bourbon? No problem, just use apple cider in the frosting, too.

INGREDIENTS

APPLE CIDER CUPCAKES: -all-purpose flour – cream of tartar – baking soda  - baking powder - salt - cinnamon – granulated sugar - brown sugar - butter - eggs - vanilla extract - vegetable oil - apple cider

PREPARATION

Preheat the oven to 350F.

Line 12 regular-sized muffin tins.

Stir together the dry ingredients in a mixing bowl.

Cream together butter and sugar in the bowl of a stand mixer.

Add the vanilla, and eggs, beating between each addition.

Alternate adding the dry ingredients and apple cider and oil mixture until just combined.

Divide the batter evenly between the muffin tins. Bake until set.

Mix together the cream cheese, butter, bourbon, and vanilla until smooth.

Pipe or spread the cream cheese frosting on top of cooled cupcakes.

To really take it up a notch, drizzle bourbon caramel on top, too!

Can I make the frosting alcohol free?

Yes, substitute apple cider in place of the bourbon to make it alcohol-free.

Apple cider or apple juice?

You can use either, but if you use apple juice you may want to add a squeeze of lemon to increase the tartness, similar to the taste of apple cider.
