Baked Three Cheese Manicotti with Kale

Make homemade cheese manicotti for a pasta dinner! Tubes of al dente pasta are filled with a three cheese and kale mixture and surrounded by vodka (or marinara) sauce. It's a hearty, comforting, meatless meal the entire family will love.

INGREDIENTS

- Manicotti Shells - Shallot & Garlic - Kale - Ricotta - Cream Cheese - Parsley - Basil - Mozzarella - Egg - Vodka Sauce (or marinara)

Cook the manicotti shells 2-3 minutes less than the package directions. Drain and let cool.

Meanwhile, saute shallot, garlic, and kale.

Combine the cheese, herbs, and slightly cooled kale. Taste test, then stir in whisked egg.

Use a piping bag to make filling the shells with the cheese mixture easy.

Place filled manicotti shells on a layer of sauce in a baking dish.

Top with remaining sauce and a layer of cheese before baking.
