30-Minute Carrot Pasta with Ribbons & Thyme

This carrot pasta is what weeknight dinner dreams are made of - pappardelle noodles and carrot ribbons tossed in a light cream sauce that's luxurious and herb-filled. Ready in just 30 minutes.

INGREDIENTS

- Pappardelle - Carrots - Shallot - Garlic - Thyme - Vegetable Stock - Half and Half - Walnuts

Make carrot ribbons using a vegetable peeler with whole carrots.

Saute shallot and diced carrots in melted butter.

Add garlic, herbs, and carrot ribbons. Then, deglaze the pan and simmer with stock.

Toss with al dente noodles, half and half, and reserved pasta water if needed.
