Make carrot ribbons using a vegetable peeler with whole carrots.
Saute shallot and diced carrots in melted butter.
Add garlic, herbs, and carrot ribbons. Then, deglaze the pan and simmer with stock.
Toss with al dente noodles, half and half, and reserved pasta water if needed.
Garnish with fresh parsley (or carrot tops) and toasted walnuts.
