Pistachio Butter Cookies

These slightly crisp, soft, chewy cookies are loaded with pistachios both inside and out. It's a unique shortbread-like cookie that melts-in-your-mouth. You won’t be able to stop at just one!

These are officially added to my keeper file for cookies. Easy recipe to follow. Perfect Instructions. My whole family was shocked by how much they like them as this was our first pistachio cookie. -Julie

What You'll Need:

- Butter - Granulated Sugar - Eggs - Heavy Cream - Vanilla Extract - All-Purpose Flour - Baking Powder -Unsalted Pistachios - Salt

Combine the cookie dough, stirring in half of the chopped pistachios.

Place the dough on a large sheet of plastic wrap, form into a log, and chill overnight.

The next day, combine the rest of the chopped pistachios and sugar.

Brush the log with egg white and begin rolling in the pistacho-sugar mix.

Slice into approximately 1/4 inch slices and place 2 inches apart on a baking sheet.

Bake for 7-10 minutes until edges are slightly golden brown.
