Festive Chocolate Mint Sandwich Cookies

What You'll Need:

- Butter - Unsweetened Chocolate - All-Purpose Flour - Baking Powder - Salt - Eggs - Granulated Sugar - Powdered Sugar - Peppermint Extract

Melt butter and chocolate together until smooth.

Beat together eggs and sugar, add the chocolate mixture and gently mix in the dry ingredients.

Chill the dough for 3-4 hours, or overnight, so it's firm enough to form the dough balls.

Roll 1 tablespoon of dough into a ball and roll in powdered sugar.

Place dough balls about 2 inches apart on a parchment-lined baking sheet.

Bake for 14-15 minutes until the edges are set. Transfer to a cooling rack.

Prepare the mint frosting for the filling, adding green food coloring if desired (not pictured here).

Pipe or spread the frosting on the bottom of one cookie, then top it with another cookie to sandwich together.
