30-Minute Creamy Pasta Primavera

Pasta Primavera is what's for dinner! In just 30 minutes, wide strips of pappardelle pasta get tossed in a light cream sauce that's bursting with fresh veggies. It's an irresistible combination that can be customized with what's on hand.

INGREDIENTS

- Pappardelle - Carrots - Zucchini - Bell Pepper - Tomatoes - Frozen Peas - Onion - Garlic - Half and Half - Parmesan Cheese

Saute onion in butter and olive oil.

Add sliced bell peppers, tomatoes, garlic, herbs, and red pepper flakes.

Add carrot ribbons, zucchini, then deglaze the pan with wine or vegetable stock.

Simmer with vegetable stock as it reduces.

If using, add frozen peas. Stir in parmesan cheese and half and half.

Toss with the al dente noodles until coated with the sauce.
