10-Minute Fennel and Citrus Salad
You'll fall in love with this light and refreshing Fennel and Citrus Salad with a homemade citrus vinaigrette dressing. It's easy to make in just about 10 minutes. It makes an excellent side dish or simple lunch.

INGREDIENTS
- Fennel
- Variety of Citrus
- Arugula
- Honey (or agave)
- Lemon
- S & P

Thinly slice fennel, reservering the fronds.

Cut the peel off of the orange, then segment. Do this over a bowl to catch the juices.

Once the segments have been removed, squeeze the membrane over a bowl to extract the juices.

Combine the juices with olive oil, salt, and pepper. You can do this in the bowl, too!

Toss together arugula, fennel, and citrus (plus fennel fronds) and toss with dressing.

Enjoy immediately!
