How to Make Lime
Simple Syrup
Homemade lime simple syrup gives cocktails, limeade, and even desserts a bright tart flavor! It's sweet with a zesty tang thanks to fresh lime zest and juice. Ready in under 10 minutes.

INGREDIENTS
- Water
- Sugar
- Fresh Limes

Zest the limes using a microplane or grater (pictured with lemon). Do not press too hard or you'll get the bitter white pith.
Rub the zest and sugar together to release lime oil and infuse the sugar.

Place the sugar and lime juice in a saucepan and bring to a simmer until the sugar is dissolved.

Strain out the lime zest from the syrup.

Use immediately or transfer to a jar. Note, for best results let cool before using in a drink.
