ONE POT CREAMY PUMPKIN PASTA

Cozy up with a bowl of this creamy (without cream!) pumpkin pasta. It’s made all in one pot in under 30 minutes!

THE INGREDIENTS

- olive oil or unsalted butter - yellow onion - garlic cloves - cinnamon - nutmeg - red pepper flakes - ground ginger - Salt and pepper - fresh sage finely - fresh thyme - white wine (optional) - vegetable stock - rigatoni pasta or a similar shape - corn starch (optional) - pumpkin puree

Prepare your fabric

I wash the fabric with Synthrapol detergent, which is perfect to prep fabric for dyeing.

Melt butter or use olive oil to keep it dairy-free. Add onion and garlic.

Add cinnamon, nutmeg, ground ginger, pepper, and salt.

Toast spices for 30 seconds, then add fresh sage and thyme.

Use white wine or vegetable stock to deglaze the pan and scrape any browned bits up for flavor.

Pour in the remaining vegetable stock and bring to a boil.

Once boiling, add in the pasta.

For a thicker sauce, remove some of the liquid and combine it with cornstarch.

With a few minutes remaining, stir pumpkin puree into the pasta and continue to boil until al dente.

Also add the cornstarch slurry to thicken the sauce.

Once the pasta is al dente and the sauce is thick, it's time to serve!

Top with parmesan (or nooch) breadcrumbs as desired and enjoy!
