20-Minute Shrimp Piccata

INGREDIENTS

Sauté the shallot, then add garlic, in a skillet with olive oil.

Add the shrimp and cook until almost done. They will finish cooking in the sauce. Remove from pan.

Deglaze the pan with white wine. Then add vegetable stock, lemon juice, and capers.

Add the shrimp back to the skillet, along with butter and parsley.

Serve over pasta, with sourdough bread, or alongside crispy potatoes.
